Green Coat Catering Company got its start in 2010 when chefs and friends Rich Poole and Carl Moffi decided to parlay their mutual love of cooking and entertaining into a catering business. Rich's passion for the culinary arts and unmatched skills with the smoker (affectionately named ‘Bessie’) compliment Carl's background in fine dining and affinity for all things fried (thanks to ‘Ruby,’ the trusty deep-fryer).

The then-called Trinity Catering started doing weekend events for Trinity Lutheran Church. That weekend business grew, and in January 2012, the company became Green Coat Catering Company, named for the distinctive light-green chef coats favored by Rich and Carl. Green Coat Catering Company excels at casual and elegant events alike, and the enthusiasm and dedication of owners/chefs is evident in the testimonials of their clients.

Cooking has been a part of Chef and Owner Rich Poole’s life since he was old enough to be trusted around an open flame. His first foray into cooking as a profession was in his teens while working at his parent’s restaurant at the Beech Mountain Club in North Carolina.

After attending Western Carolina University, he went into banking and mortgage where he learned the fundamental skills about client relationships, attention to detail and customer service.

In the early 90s, Rich’s passion for preparing food was rediscovered. Rich and treasured friend Allen Hutchinson spent days preparing dishes for the Hutchinson’s annual Christmas Parties. In addition to securing an invitation to the festivities, this experience gave Rich the confidence to branch out professionally as a part-time caterer.

In 2009, Rich left the banking and mortgage industry to put his full-time efforts into food and catering. He accepted a position as Trinity Lutheran Church’s Food Service Manager, preparing healthy breakfasts and lunches for the students and staff as well as catering evening and weekend events as Trinity Catering.

Rich is a native Floridian, and has lived in Orlando since 1986 with his wife and three children.


With close to a decade of experience as part of the Ritz-Carlton’s culinary staff, chef Carl Moffi’s fine dining background is evident in every dish he prepares. Whether he’s cooking his personal favorite plated dish, pan-seared snapper, or deftly arranging a cheese crudités platter, the attention to detail Carl exhibits is second-to-none.

It’s little wonder, as Green Coat’s resident Eagle Scout (never hurts to have one of these guys around the kitchen!) has been cooking professionally since 1998. Born and raised in Miami, Carl’s love for the culinary arts started at a young age and grew as he worked in restaurants. From dishwasher, to server, to prep cook to chef, Carl truly has done it all - including a stint as a butcher!

A member of Trinity Lutheran Church, when he’s not in the kitchen, Carl enjoys spending time with his wife Lauren, indulging in his favorite cuisine (Italian, of course!) and cheering his hometown Miami Dolphins to their first winning season since 2008 (he hopes…he really, really hopes…).
